Dark Chocolate Coconut Pudding Recipe (Dairy-Free)

Make this Dairy-Free Dark Chocolate Coconut Pudding recipe for a few lush bites

when you need to satisfy your sweet tooth! It’s Paleo!

If you prefer a bit more sweetness, you could add a touch of raw local honey or even some maple syrup.

Ingredients

  • 2 cups coconut milk full-fat
  • 1/2 tbsp gelatin
  • 100 g dark chocolate chopped into small pieces
  • 1/2 tsp vanilla extract

Instructions

  1. Bloom the gelatin.In a small bowl, combine a tablespoon of the coconut milk and the gelatin. Mix and allow the gelatin to bloom for about 5 minutes. This step is key for clump-free pudding.
  2. Warm the coconut milk.Heat the rest of the coconut milk on medium-low in a heavy-bottomed pot. You want to warm it enough to dissolve the gelatin but don’t allow it to boil. Add the chocolate and whisk constantly until it melts.
  3. Add the chocolate.Once the chocolate has melted, whisk in the bloomed gelatin. Continue whisking until the bloomed gelatin dissolves.
  4. Finish it up.Turn off the heat and whisk in the vanilla extract.
  5. Pour into your desired glasses or cups and chill for at least 2 hours or until set.

 Can Dogs and Cats Get Arthritis?

It’s not only humans that are susceptible to arthritis. Even younger dogs and cats, when the circumstances are right, can suffer from arthritic changes. One or more joints may be affected, causing pain and stress for the afflicted pet, making mobility an issue. It is estimated that 20% of pet dogs over the age of 1 year are affected and 61% of cats over the age of 6. Cats older than 14 have an 82% risk of arthritis.

What causes Arthritis in Dogs and Cats?

The most common cause of arthritis in our pets is the result of abnormal rubbing within the joint. This can occur as a consequence of

  • joint instability caused after ligament damage
  • abnormal cartilage development
  • trauma
  • fractures

Arthritis will Shorten your Pet’s Life

Arthritis may be more common in older pets but it can develop at any age. Any joint in the body can be affected but typical areas include but are not limited to the shoulders, neck, back area, the hips, knees, and elbows. It will shorten the life of your pet as the cartilage between the joints slowly breaks down, causing pain and suffering that might range from discomfort to crippling. Resulting inactivity can exacerbate the problem.

Symptoms of Arthritis in Dogs and Cats

  • Slow movements – when it hurts to get up your pet will move slowly to avoid pain
  • Bunny hopping – some pets change their gait negotiating stairs. Reluctance to go up may indicate hip problems; reluctance to go down may indicate arthritic shoulders or elbows.
  • Changing gait or posture – some arthritic pets will limp, other changes may be more subtle such as head bobbing, a lower hind end carriage or the stomach may be held differently.
  • Eating less – it might not be worth getting up to eat if the pain is too great. Large breeds of dogs may find it easier to eat if the bowl is elevated.
  • Weightless movement may cause your pet to gain weight. This puts more stress on already inflamed joints.
